Ingredients
  

  • 1 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup milk
  • 1/2 cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line with parchment paper.
  • In a large mixing bowl, whisk eggs and sugar until light and frothy.
  • Add applesauce, vegetable oil, and milk, stirring until combined.
  • Sift in flour, baking soda, salt, cinnamon, and nutmeg. Gently fold into the wet mixture. Do not overmix.
  • Pour batter into the prepared cake pan. Sprinkle walnuts on top if using.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  • Slice and serve as desired. Enjoy plain, with powdered sugar, or a drizzle of caramel sauce.

Notes

Substitute walnuts with pecans or leave them out for a nut-free version.
Add a teaspoon of vanilla extract for extra depth of flavor.
Store leftovers in an airtight container for up to 4 days.
